If a recipe says "untested"...

We want to post scans of all the original recipes so everyone in our family can enjoy them even if we haven't gotten around to testing each one in our modern kitchen. As we test each recipe, we will add our notes and photos to the recipes we do test and remove the note "untested" in the title. If you make one of the untested recipes, take a photo of the finished product and send us a note to let us know of your experience so we may include those in the recipes as well.

Frangipan Cream (untested)

This appears to be a recipe is a multi-use cream filling. It is written in fountain pen in Esther's handwriting.

  • 2/3 cup powder sugar
  • 3 egg yolks
  • 1/4 teaspoon salt
  • 2 tablespoons butter
  • 2/3 teaspoon vanilla
  • 1/3 cup flavoring
  • 1 egg
  • 1 cup scalded milk
  • 2 tablespoons macaroons (dried and "rolled" [probably means crushed])
  • 1/3 teaspoon lemon extract
Instructions are sketchy and seem slightly incomplete:
  1. Make a cream filling of powdered sugar and sugar
  2. Add butter, macaroon and extracts
