If a recipe says "untested"...

We want to post scans of all the original recipes so everyone in our family can enjoy them even if we haven't gotten around to testing each one in our modern kitchen. As we test each recipe, we will add our notes and photos to the recipes we do test and remove the note "untested" in the title. If you make one of the untested recipes, take a photo of the finished product and send us a note to let us know of your experience so we may include those in the recipes as well.

Helen's Cocoa Apple Cake


This typewritten recipe is dated August 16, 1972. Helen Wilson was one of Grammy's best friends. I'm certain this recipe is from her.

Ingredients:
  • 3 eggs
  • 2 cups sugar
  • 1 cup margarine [I'd use butter]
  • 1/2 cup water
  • 2 1/2 cup flour
  • 2 tablespoons cocoa
  • 1 teaspoon all spice
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup finely chopped nuts
  • 2 cups grated apples or 2 cups applesauce
  • 1 tablespoon vanilla
  • 1/2 cup chocolate chips

Instructions:
  1. Beat together eggs, sugar, margarine [or butter], and water until fluffy
  2. Sift together flour and other dry ingredients in separate bowl
  3. Add sifted dry ingredients to creamed mixture
  4. Mix well
  5. Fold in nuts, chocolate chips, apples, and vanilla
  6. Spoon into greased and floured 10-inch loose-bottom tube pan
  7. Bake in 325°F oven for 60-70 minutes until cake tests done
