If a recipe says "untested"...

We want to post scans of all the original recipes so everyone in our family can enjoy them even if we haven't gotten around to testing each one in our modern kitchen. As we test each recipe, we will add our notes and photos to the recipes we do test and remove the note "untested" in the title. If you make one of the untested recipes, take a photo of the finished product and send us a note to let us know of your experience so we may include those in the recipes as well.

Buttermilk Puffs (untested)


This recipe is written in a handwriting I don't recognize and is attributed to Lois Downey. This recipe calls for frying the puffs. Make sure you have your deep fat frying setup in addition to the ingredients below.

Ingredients:
  • 2 cups sifted flour
  • 1 teaspoon salt
  • 1/4 cup sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground Mace [a sister spice to nutmeg]
  • 1 teaspoon baking powder
  • 1 egg
  • 3/4 cup buttermilk
  • 1/4 cup oil

Instructions:
  1. Sift together dry ingredients
  2. Add egg, buttermilk, and oil
  3. Stir with a fork until smooth like a yeast dough
  4. Drop by spoonful into a deep fat fryer or deep skillet of hot fat 
  5. Fry for 4-5 minutes
It would be interesting to play with this recipe and see if different versions can be made with various flavor profiles (e.g., cheese buttermilk puffs, garlic buttermilk puffs, vanilla buttermilk puffs).
