If a recipe says "untested"...

We want to post scans of all the original recipes so everyone in our family can enjoy them even if we haven't gotten around to testing each one in our modern kitchen. As we test each recipe, we will add our notes and photos to the recipes we do test and remove the note "untested" in the title. If you make one of the untested recipes, take a photo of the finished product and send us a note to let us know of your experience so we may include those in the recipes as well.

Casserole Bread (untested)


This typewritten recipe is one of several recipes in the box that use a "batter method". It is also interesting to note the various options for the baking vessel.

Ingredients:
  • 1 cup milk
  • 3 tablespoons sugar
  • 1 tablespoon salt
  • 1 1/2 tablespoons shortening
  • 1 cup warm (not hot) water
  • 2 packages or cakes of Fleishman's yeast, active dry or compressed
  • 4 1/2 cups sifted enriched flour

Instructions:
  1. In large saucepan, scald milk
  2. Stir in sugar, salt, and shortening
  3. Cool milk mixture to lukewarm
  4. In separate bowl, sprinkle or crumble yeast into warm water and stir until dissolved
  5. Stir yeast mixture into lukewarm milk mixture
  6. Add flour and stir well until blended (about 2 minutes)
  7. Cover and let rise in warm place free from draft for about 40 minutes or until the batter has more than doubled in bulk
  8. Stir batter down 
  9. Beat vigorously for about 30 seconds
  10. Turn batter into a greased 1 1/2 quart casserole pan (a square 8-inch by 8-inch by 2-inch pan or an 8-inch tube pan may also be used)
  11. Bake uncovered in a moderate oven at 375°F for about 1 hour
