This typewritten recipe is one of several recipes in the box that use a "batter method". It is also interesting to note the various options for the baking vessel.
Ingredients:
- 1 cup milk
- 3 tablespoons sugar
- 1 tablespoon salt
- 1 1/2 tablespoons shortening
- 1 cup warm (not hot) water
- 2 packages or cakes of Fleishman's yeast, active dry or compressed
- 4 1/2 cups sifted enriched flour
Instructions:
- In large saucepan, scald milk
- Stir in sugar, salt, and shortening
- Cool milk mixture to lukewarm
- In separate bowl, sprinkle or crumble yeast into warm water and stir until dissolved
- Stir yeast mixture into lukewarm milk mixture
- Add flour and stir well until blended (about 2 minutes)
- Cover and let rise in warm place free from draft for about 40 minutes or until the batter has more than doubled in bulk
- Stir batter down
- Beat vigorously for about 30 seconds
- Turn batter into a greased 1 1/2 quart casserole pan (a square 8-inch by 8-inch by 2-inch pan or an 8-inch tube pan may also be used)
- Bake uncovered in a moderate oven at 375°F for about 1 hour
