Chocolate Sauerkraut Cake (untested)

This recipe is written in Grammy's handwriting in ballpoint pen. It is dated September 1969 and is attributed to Gloria Greco.

Ingredients:

• 2 1/4 cups flour
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1/4 teaspoon salt
• 1/2 cup cocoa
• 2/3 cup shortening
• 1 1/2 cups sugar
• 1 1/4 teaspoon vanilla
• 3 eggs
• 1 cup water
• 1/2 cup drained sauerkraut (chopped)

Instructions:

1. Sift together all dry ingredients
2. In a separate bowl, cream shortening with sugar until light and fluffy
3. Add vanilla
4. Add eggs one at a time
5. Add dry ingredients alternating with water
6. Add sauerkraut and beat thoroughly
7. Pour into well-greased 13"x 9"x 2" baking pan
8. Bake at 375°F for 35 minutes
