If a recipe says "untested"...

We want to post scans of all the original recipes so everyone in our family can enjoy them even if we haven't gotten around to testing each one in our modern kitchen. As we test each recipe, we will add our notes and photos to the recipes we do test and remove the note "untested" in the title. If you make one of the untested recipes, take a photo of the finished product and send us a note to let us know of your experience so we may include those in the recipes as well.

Zucchini bread (untested)


This recipe is written in ballpoint pen in a handwriting I don't recognize.

Ingredients:
  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 cups peeled and grated zucchini
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 3 teaspoons ground cinnamon
  • 1/2 cup nuts (type of nuts isn't specified)

Instructions:
  1. Beat eggs until light and foamy
  2. Add oil, sugar, zucchini and vanilla
  3. Mix lightly but well
  4. Mix flour, baking soda, baking powder, salt and cinnamon in a separate bowl
  5. Add flour mixture to first mixture and blend
  6. Add nuts
  7. Bake in two greased 9-inch by 5-inch load pans at 325°F for 1 hour or until done
  8. Remove from pan and cool on rack
